Add 4 egg whites to a medium-high heated saute pan and sprinkle in ¼ c combo of sliced onion, jalapenos, spinach and mushrooms. Once it is almost heated through, fold in half and continue to cook until the egg whites have solidified. Top with some fresh salsa and dive in!
